Yesterday I made this meal for one of the athletes I cook for! It’s a crispy honey mustard salmon over a bed of brown nice & quinoa, with a side of roasted broccolini🥦 + roasted mini peppers + roasted carrots🥕+ crispy garlicy smashed potatoes 🥔 + avocado 🥑 with @traderjoes everything but the bagel seasoning + a lemon wedge 🍋 + toasted pine nuts on top. My favorite part was the garlic potatoes 🤤. Which part is your favorite?

RECIPE for the HONEY MUSTARD SALMON 👉🏼 I mixed together olive oil + dijon mustard + @thebeekeepershoney raw honey 🍯 + splash of lemon juice in a mason jar then poured it all over the fresh salmon filet. After that, I sprinkled the salmon with a little salt + paprika + a tiny bit of panko crumbs (just for a crunch). Then it was baked at 400 for about 20 min, broiling it on high for the last 2 minutes

RECIPE for my GARLIC SMASHED POTATOES 👉🏼 I boiled a bag of potatoes for 15 min, drained them, then placed them on a parchment paper lined baking dish. I used a glass cup to press down on each one slightly (don’t press too hard or it will fall apart). Then mix together 1/2 parts ghee + olive oil + garlic powder. Brush that mix all over each of the potatoes & bake at 400 for about 45 minutes, broiling on high for the last 3-5 minutes.
