✨WARM ROASTED VEGETABLE SALAD BOWL✨I’m headed to a yoga class, hope you all have a great Sunday!

1 golden beet
1 delicata squash
1 green bell pepper
1 cup baby carrots
1/2 red onion
4 cups spinach
1 tbsp dried cranberries
1 tbsp crumbled goats cheese
1 tbsp fresh parsley, chopped
1 tbsp chopped walnuts
@traderjoes balsamic glaze
@motherraw maple fig dressing

1️⃣ Wrap the uncooked beet in foil, then bake in a 400 degree oven for about 90 min.
2️⃣ Meanwhile, wash & chop all of your remaining vegetables. Toss with avocado oil, salt & pepper on sheet pan. Bake for about 40 min, flipping half way.
3️⃣ To assemble, add a large layer of spinach on the bottom, top with all of the roasted vegetables, cranberries, goats cheese, parsley, walnuts and dressing. Enjoy warm!
