warm ROASTED BRUSSEL SPROUT & ARUGULA salad ๐Ÿฅฐ I havenโ€™t talked about this much but I turned to Aryuveda around 2 months ago to help with my gut issues & itโ€™s been phenomenal. I learned that my vata is out of balance, so I need more warming foods cooked in good fats. With that said, I am trying to steer away from raw salads, raw fruit & chips. If youโ€™re interested in me sharing more about my aryuvedic experiment let me know!

youโ€™ll need:
โ€ข @traderjoes shaved brussel sprouts
โ€ข quinoa cooked in bone broth
โ€ข organic arugula
โ€ข blue cheese crumbles
โ€ข dried cranberries
๐Ÿ‘‰๐Ÿผ I just roasted the shaved brussel sprouts with some avocado oil spray on a parchment paper lined baking dish at 350 for about 20 minutes. To assemble I started with a huge bed of arugula (it wilts with the warm brussels sprouts on top), added the roasted brussel sprouts, warm quinoa, blue cheese then topped it all with my favorite @motherraw maple fig dressing. Sprinkled with some fresh ground pepper + parsley flakes
