✨TURMERIC CARROT CAKE MUFFINS✨with walnuts & raisins! For all my peeps with food sensitivities out there, these are gluten-free + paleo + dairy-free + soy-free + egg free!

directions👇🏼
1️⃣ Mix together 1 tbsp chia seeds + 2 tbsp warm water (set aside to gel).
2️⃣ In a large bowl, mix your dry ingredients: 1/2 cup almond flour + 2 tbsp rolled oats + 1 scoop of vanilla protein powder (OPTIONAL, I used @drinkorgain vanilla plant based protein powder) + 1 tsp baking powder + 1 tsp baking soda + 1 tsp turmeric + 1 tsp cinnamon + 1/2 tsp nutmeg + pinch of salt.
3️⃣ In a separate bowl, mix the wet ingredients: chia egg + 1 tbsp melted coconut oil + 1/2 cup grated carrots 🥕+ 1/2 cup almond milk + 1 tbsp maple syrup + 1 tsp vanilla.
4️⃣ Add the wet ingredients into the dry & stir until incorporated. Add in walnuts & raisins!
5️⃣ Bake at 350 for about 40-50 minutes.
