this SPRING PESTO PASTA turned out delicious & was made with the current ingredients in my fridge, pantry & freezer. The ingredients below are interchangeable, use what you have & use this as inspo πŸ’š What else would you add into this green pasta dish?

1️⃣Slice yellow & green squash & roast at 400 for 30 mins.
2️⃣ Boil @eatbanza chickpea noodles with frozen peas. Once cooked, drain most of the water out of the pot (keep about 1/4 of the water in the noodles).
3️⃣ To the pasta add the roasted squash + 1 cup kale + 2 cups spinach + 2 tbsp @traderjoes DF pesto + garlic powder + Italian seasoning + 1 spoon of kalamata olives (optional). Mix until combined & the greens have wilted & the dish is warm.
