This meal is by far everyones favorite, I have even had people say its the best fish they have ever eaten. So I thought why not share my recipe so you guys can try it too! Its my PESTO CRUSTED SALMON with brown rice & roasted carrots, broccoli, asparagus & potato with avocado + lemon on the side!
SALMON 👉🏼 place your salmon on a baking dish, then smear a generous amount of pesto + m juice of 1/2 a lemon 🍋+ 1 tbsp panko breadcrumbs + teeny bit of dill on top of the salmon in that order. Bake at 400 for 15 min, then broil on low for 5 min. Comes out so crispy on top!
BROWN RICE 👉🏼 I cook my brown rice with chicken stock for my athletes (you could use veggie stock) + @costco no-salt seasoning + lots of pepper.
ROASTED VEGGIES 👉🏼 peel the carrots 🥕+ dice the potatoes, then drizzle with olive oil + salt + pepper & rosemary, bake at 400 for about 40 min (broil for the last 5 min with the salmon). The asparagus + broccoli 🥦 can be on the same baking sheet drizzled with olive oil at 400 for about 10-15 min.
