heres what I did 👉🏼 I sliced 1 @imperfectproduce zucchini super thinly & laid them all out on a baking sheet in a single layer, sprayed both sides with a lil’ avocado oil and baked them for like 15 -20 min at 400. Meanwhile, I sautéed chopped red onion + chopped @imperfectproduce bell pepper + garlic + black beans & some @freshcravingssalsa over med/high heat for about 10-15 min. Once the zucchini was out of the oven, I layered it with the sautéed vegetables, then topped it with some @so_delicious dairy free cheese 🧀
