maple roasted brussel sprouts & butternut squash👉🏼 I washed, then cut my @imperfectproduce brussel sprouts in half. Then I peeled & cubed my butternut squash. I arranged them both on a parchment paper lined baking sheet (that way, they don’t need oil – trick I learned from my friend @edithagoston ) & baked them at 400 for 40 min. Once they were roasted, I tossed them in drizzle of maple syrup & dried cranberries. Serve warm or cold.

pear & kale salad 👉🏼 chop kale into small pieces (save those stems for smoothies😉), then massage olive oil into the kale with your fingers. Add in a chopped pear 🍐+ pine nuts + feta cheese + balsamic vinegar. Mix well & serve cold.
