• 1 lb of @kvaroyarctic salmon from @wholefoods OR online at @FultonFishMarket
• 2 packets @traderjoes microwavable white rice
• 3C broccoli florets, steamed
• 3/4C scallions, chopped
• 2T sesame seeds
[for the glaze] • 1/4C coconut aminos or soy sauce • 1T lime juice • 1/2t garlic powder
• 1/2t ground ginger
• 1/4t salt • 1/8t black pepper
1️⃣ Combine the ingredients for the glaze then pour over the salmon in a bowl. Marinate in the fridge from 30 mins – 4 hours.
2️⃣ Remove salmon from fridge & let it sit at room temp for 10 mins.
3️⃣ Heat 1 tbsp coconut oil in a large skillet over med/high heat. Once hot, place the salmon skin side up & cook for 5 mins on one side. Flip & cook for another 4 mins on the other side until cooked through.
4️⃣ Serve the salmon over the rice + with a side of steamed broccoli + sprinkle of chopped green onions + sesame seeds.
