SWEET POTATO NACHOS with a QUESO CASHEW DIP 🥳 For anyone who loves queso but doesn’t like the feeling they get when they actually eat queso, then let me introduce you to the @freshcravingssalsa organic, dairy-free, gluten-free queso (which may I add… tastes like the REAL THING). 1 large sweet potato
1 bell pepper, sliced
1/4 red onion, sliced
1/4 cup tomato, chopped
1/4 cup corn, frozen
1/4 cup crispy romaine lettuce
2 tbsp @freshcravingssalsa queso
1 tbsp plant based cheese
1 tbsp green onion, sliced
1/2 lime, sliced

1️⃣ Peel the sweet potato, wash well then using a sharp knife, cut the sweet potato into 1/4 inch slices. Spray the sweet potato with avocado oil on both sides, do not overlap & bake for 30 minutes, flipping half way.
2️⃣ Sauté the red onion, bell pepper & corn in avocado oil for about 10 minutes until translucent.
3️⃣ Once the potato is done, stack on a smaller sheet pan, top with bell pepper, red onion, corn & plant based cheese & bake for another 10 mins until warm.
4️⃣ Top with lettuce, tomato, green onion, lime and @freshcravings queso.
