SUMMER GRAPEFRUIT & AVOCADO KALE SALAD✨ I am currently writing a blog post on eating mindfully, what it actually means & small steps we can take to be more mindful and present while eating. Ill be then leading a challenge you can participate in at home if you are interested in slowing down & enjoying the flavors & textures around eating food! More info to come in a few days! 6-8 cups of @naturesgreens pre-chopped & pre washed organic kale + 1 tbsp olive oil to massage
1 avocado
1 grapefruit
1/4 cup roasted pecans
1/4 cup feta cheese
2 tbsp dried cranberries
2 tablespoons olive oil
2 tbsp grapefruit juice
1 tbsp Apple cider vinegar
1 tbsp dijon mustard
1/2 tsp maple syrup
salt & pepper to taste
– Begin by chopping the kale super fine, then drizzle 1 tbsp of olive oil over the kale & massage thoroughly with your fingers. Chop the remaining ingredients & add to the salad.
– Mix all of the dressing ingredients in a mason jar & shake. Pour it over the salad. Makes 2 servings.
