sugar free PROTEIN GINGERBREAD MUFFINS πŸ’ͺ🏼 I modified my gingerbread donut recipe, removed the sugar & made them into muffins. Im curious, if you’re one of us who is baking a ton right now, what are you enjoying to bake?

β€’ 1 cup oat flour (blend oats to flour)
β€’ 2 scoops vanilla protein powder (I used @ancientnutrition vanilla bone broth collagen)
β€’ 1 tsp @nwbulkmarket cinnamon
β€’ 1 tsp ground ginger
β€’ 1/2 tsp nutmeg
β€’ 1/4 tsp pink salt
β€’ 1/2 tsp baking powder
β€’ 1/2 tsp baking soda
[wet]
β€’ 1/4 cup applesauce
β€’ 3 tbsp plant based milk
β€’ 2 tbsp coconut oil
β€’ 1 flax egg
β€’ 1/2 tsp vanilla

1️⃣ Combine the dry ingredients & wet ingredients in a two separate bowls.
2️⃣ Add the wet ingredients slowly to the dry ingredients & mix well.
3️⃣ Pour into muffin tins, bake at 375 for 20 mins.
Makes 6 muffins! Store in an airtight container in the fridge for 5 days!
