SPICED CHOCOLATE SWEET POTATO PIES ๐Ÿ  Lets talk about balance. Many times I get the question, โ€œomg, what do you even eat?โ€ or โ€œI didnโ€™t know you ate that, isnโ€™t that bad for you?โ€ My long answer to that: Diet shouldnโ€™t be what you DONT eat, but what you DO eat. I am a huge believer that restricting certain foods can lead to binging in the future (Iโ€™ve been there). So why not treat ourselves when we crave certain foods? Doesnโ€™t mean you have to eat a whole entire cake, just treat yourself & savor every bite. Then move on with your life and donโ€™t look back for a second. Because those moments are our happiness, our sanity and our memories. Anyone with me?
1 package of @sweetlorens gluten-free fudgy brownie dough
1 cup mashed sweet potato
1/4 cup plant-based milk
1 tbsp molasses
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp vanilla
1/8 tsp salt
1๏ธโƒฃ Line a muffin tin with muffin liners. Place one brownie dough in each muffin tin & press down slightly to flatten.
2๏ธโƒฃ Bake at 350F for 20 minutes.
3๏ธโƒฃ Add the sweet potato to a food processor along with all of the other ingredients. Blend for 30 seconds until a creamy consistency is attained.
4๏ธโƒฃ Once the cookies have baked, let them cool. Then fill with the sweet potato filling, place in the fridge to set for 15 minutes. Enjoy!
