SPAGHETTI SQUASH BURRITO BOWL spaghetti squash can be a great pasta alternative! It contains tons of fiber, beta-carotene, vitamin A and vitamin C. 1 spaghetti squash
1 can @freshthyme black beans
1 can @freshthyme canned corn
1/2 cup @freshthyme salsa
2 ripe avocado
2 limes, juiced
1 tomato, chopped
1/4C organic Mexican cheese
2T green onion, chopped
2T taco seasoning

1️⃣ [SPAGHETTI SQUASH] cut spaghetti squash in half (length wise), spray the inside with avocado oil oil + sprinkle with salt. Place face down on a baking dish. Bake at 424 for 30 minutes. Remove from oven, shred with a fork to form noodles.
2️⃣ [BURRITO FILLING] sauté 1/2 red onion + 1 large bell pepper in avocado oil for about 5 minutes. Add drained black beans + corn + salsa + seasoning. Cook for an additional 5 minutes.
3️⃣ [AVOCADO CREMA] blend 2 avocados + juice of 2 limes + 2 tbsp water + salt + pepper until smooth & creamy.
4️⃣ [ASSEMBLY] once the spaghetti squash is cooked, stuff with the burrito filling, sprinkle with cheese then broil for 5 minutes on high. Top with fresh tomato, green onion & avocado crema.
