SPAGHETTI & MEATLESS MEATBALLS with @freshthyme yellow lentil spaghetti + organic Italian herb pasta sauce This recipe is for all of my comfort food lovers that want a big bowl of warm pasta packed with plant based protein!

1 can cannellini beans, drained & rinsed
1/2 cup oat flour
2 flax eggs
2 tbsp avocado oil
1 medium onion, chopped
1 tbsp dried basil
1 tbsp dried oregano
1 tsp garlic powder
1 tsp nutmeg
1 tsp salt
1 tsp black pepper

1️⃣ Cook the onion & spices in avocado oil for 5 mins until translucent and fragrant.
2️⃣ Add the beans to a food processor and blend until smooth.
3️⃣ Add the onions, oat flour & flax egg to the beans & blend again.
4️⃣ Refrigerate for 15 mins then roll into 1 tbsp size balls & place on a parchment paper lined baking dish.
5️⃣ Bake at 400 for 40 minutes, flipping half way.
** makes 20 vegan meatballs.
