Sometimes simplicity is all we need. I made these CINNAMON ZUCCHINI OATS for breakfast yesterday. My best time saving tip is to make a little extra of whatever youโ€™re cooking up, that way you can have leftovers the next day (just heat, top with toppings & serve). The recipe below yields 2 huge servings!

1๏ธโƒฃ To a pot, I added 1 grated zucchini + 1/2 cup gluten free rolled oats + 1 tbsp ground flaxseeds + 1 tbsp chia seeds + about 2 cups of water (you could also use your milk of choice). Turn on med heat & stir for about 20 min (add more liquid if necessary).
2๏ธโƒฃ Once finished, add your spices: I added vanilla + lots of cinnamon + a pinch of nutmeg then stir to incorporate.
3๏ธโƒฃ I topped mine with 1/3 sliced ๐ŸŒ + blueberries + @arganiabutter maple almond butter + more cinnamon!
