✨roasted BUTTERNUT SQUASH & GOLDEN BEET salad with POMEGRANATE✨Here is the recipe I demo’d on @imperfectproduce IG story yesterday! If you missed it, go ahead and check it out on their page. This could make a great holiday party side dish everyone will love! Have you ever tried golden beets?

1️⃣ I washed, peeled then cubed the @imperfectproduce butternut squash & golden beets. Lay on a parchment paper lined baking dish & roasted at 400 for 40 min (flipping half way) then broil for the last 10 min (if you like that char).
2️⃣ I deseeded my pomegranate (I have such a great tip on deseeding in the @imperfectproduce IG story).
3️⃣ Make your maple balsamic dressing in a mason jar: Add 1 tbsp balsamic vinegar + 1 tbsp olive oil + 1 tbsp dijon mustard + 2 tsp maple syrup + 1 tsp apple cider vinegar + juice of 1/2 lemon + salt + pepper (this dressing is literally so good on anything).
4️⃣ Once the veggies are done roasting, toss them in a big bowl with the deseeded pomegranate + toasted pumpkin seeds + maple balsamic vinaigrette + feta cheese (serve warm or cold).
