quick no bake PUMPKIN CHEESECAKE TRUFFLES! These are vegan + gf + refined sugar free + come together in 20 mins + filled with natural protein/fiber. Swipe for the consistency of the truffle batter & turn up your volume if you wanna drool. Tag a pumpkin loving friend who may like this treat👇🏼
• 1 can chickpeas, drained & rinsed
• 1 cup canned pumpkin, I found mine at @aldiusa
• 1/3 cup liquid sweetener, I used @soomfoods date paste but maple syrup & honey would work.
• 1/2 cup coconut flour
• 1 tbsp pumpkin pie spice
• 2 teaspoon cinnamon
• 1/2 tsp sea salt (optional)
1️⃣ Add all of the truffle ingredients into a food processor or blender. Blend for about 60 seconds until a smooth consistency is attained.
2️⃣ Roll the batter into 1 tbsp size balls, makes about 32 truffles.
3️⃣ Coat in melted dark chocolate! I used @sochatti but you could also microwave 1 cup chocolate chips + 1 tbsp coconut oil until it’s smooth. Roll the balls into the chocolate & set on a parchment paper lined baking sheet.
4️⃣ Set in the fridge for about 15 minutes to harden, then enjoy!! Keep these stored in the fridge for up to 5 days!
