PUMPKIN SPICE SWEET POTATO FREEZER FUDGE πŸŽƒ You betcha I am busting out the pumpkin spice recipes already (tbh I eat pumpkin spice all year long but I finally feel like its socially acceptable to post about it). I used my brand new @nutribullet blender combo which comes with a blender pitcher, a tamper, a 1200 watt base, individual cups and lids. 1 medium boiled sweet potato (about 1c)
2 tbsp coconut oil
2 tbsp tahini (or any nut/seed butter of choice)
2 tbsp plant milk
1 tbsp maple syrup
1 tsp pumpkin pie spice
1 tsp vanilla extract
1/4 tsp of salt
1/4 cup chocolate chips

➑️ Blend the sweet potato in a blender. Add the remaining ingredients (besides the chocolate chips) and blend until smooth. Taste the batter to ensure its spice and sweetness level are to your liking. Add in the chocolate chips. Pour fudge batter into a parchment paper lined tray & freeze for about 1 hour until firm. Cut into squares and enjoy! These are best when stored in the freezer & thawed about 5-10 minutes
