✨PESTO SHRIMP over a CAULIFLOWER MASH with ROASTED VEGGIES✨ Heading out of town again for the next 4 days so I attempted to used up all of my leftover @imperfectproduce & shoot, I don’t know about you but this doesn’t look like a cleaning out the fridge meal to me.. Cheers to reducing food waste!

Here’s what I did👇🏼
1️⃣ I started with roasted veggies: I chopped a delicata squash in half vertically, scooped out the seeds, then cut into 1/3 inch half moons. Then I washed, peeled and cut some carrots. Then I chopped brussel sprouts in half. I put all of the veggies flat parchment paper in a single layer. Baked these at 400 for about 40 min.
2️⃣ Next onto the cauliflower mash: I roasted one chopped head of cauliflower + 1/2 white onion + 4 bulbs of garlic on a parchment lined sheet pan at 400 for about 20 min. Then I added everything to a high powered blender with 1/4 cup nutritional yeast & >1/4 cup of veggie broth then blend! Add salt and pepper to taste (serve warm)
3️⃣ Then the pesto shrimp: I sautéed some tail on shrimp in 1 tbsp pesto for about 2-3 min on med/high heat.
4️⃣ Served everything with fresh ground black pepper and parsley flakes
