Persian LENTIL & EGGPLANT stew over spinach with tomatoes & goat cheese

I’m Persian, most of our dishes contain some sort of meat or rice. I ❤️ experimenting how I can make the traditional Persian dishes into healthier, vegetarian/vegan friendly options! This lentil stew is called ADASI, its usually made with meat & served with some sort of bread + yogurt! Although I love both bread + yogurt, I was craving greens, so here’s what I did!
.
1️⃣ The night before, soak your lentils in a big bowl (keep in fridge).
2️⃣ The next day drain the remaining water, cook in water in a pot over med heat for ~1 hour until lentils are cooked through.
3️⃣ Sauté chopped onion + peeled & cubed eggplant + 1t minced garlic in @chosenfoods avocado oil over med heat.
4️⃣ Add the cooked lentils to the eggplant + onion. Add onion powder + garlic powder + basil + parsley + salt + pepper + oregano.
5️⃣ I served warm over a bed of fresh spinach + chopped 🍅 + goat cheese.
