Look no further, this warm WINTER SUPERFOOD BUDDHA BOWL took less than 40 min from start to finish, was extremely affordable & can be made ahead to be stored in the fridge for re-heating! Here is what @katmarris & I came up with for you beauties, we hope you enjoy the recipe👇🏼PS HAPPY FRIDAY

✔️roasted brussel sprouts & roasted sweet potato 🍠 (washed, cut then tossed the veggies in olive oil + thyme + rosemary. Lay flat on a baking dish & bake at 425 for 30 min)
✔️fluffy quinoa (1 part dry quinoa + 2 parts water, cooked on med heat for 15-20 min)
✔️chickpeas (drained + rinsed)
✔️pecans
✔️pomegranate seeds
✔️feta cheese
✔️maple balsamic vinaigrette (2 tbsp olive oil + 1 tbsp balsamic vinegar + 1 tsp apple cider vinegar + 1 tsp maple syrup + 1 tsp stone ground mustard + juice of 1/2 lemon 🍋+ s&p, add all ingredients to a mason jar & shake well)
