LEMON BLUEBERRY MUFFINS (nut free + sugar free + gluten free + egg free + dairy free + vegan)πŸŽ‰ So this was the first time experimenting with @bobsredmill cassava flour, which bakes most similar to whole wheat flour, but without the gluten Love the fluffy, yet moist texture & tastes like spring! 1 1/2 ripe banna
2/3 cup plant based milk
1 flax egg (1 tbsp flaxseeds + 3 tbsp warm water)
1 tbsp coconut oil (use olive oil if nut-free)
1 tsp vanilla
1 tsp lemon zest
1/2 tsp lemon juice

1 1/2 cup @bobsredmill cassava flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
pinch of salt

1️⃣ Mix wet ingredients in a bowl.
2️⃣ Mix dry ingredients in a bowl
3️⃣ Mix wet into dry ingredients. Add about 1/2 cup frozen blueberries to the batter.
4️⃣ Pour into muffin tins (makes 9).
5️⃣ Bake at 375 for 35-40 min, let cool for 10 min. Serve warm with your favorite vegan butter, ghee, or nut butter!
