Last nights Buddha bowl 👉🏼 sautéed @traderjoes cauliflower gnocchi with pesto (I sautéed the gnocchi on med/high heat in a tiny bit of avocado oil for about 10 min then added the pesto) + roasted carrots 🥕(cut & peeled then roasted at 400 for 40 min) + massaged kale (chopped & massaged in olive oil) + crispy roasted turnip chips (peeled, then sliced into thin pieces, lay flat on parchment paper & roast at 400 for 30-40 min) + 1/2 sliced avocado 🥑 + sprinkled with @traderjoes everything but the bagel seasoning! PS all the produce came from my @imperfectproduce box – it’s been fun experimenting with different bowl creations!
