Its soup season and I’m sharing a super easy CHEESY VEGETARIAN CHILI recipe that leaves even the meat eaters wanting more. Try serving this with some cornbread, chips or a slice of sourdough toast! What is your favorite soup?

• 1 can of black beans
• 1 can of garbanzo beans
• 1 can of kidney beans
• 1 cup of dry noodles
• 1 cup of Mexican or vegan cheese blend
• 1 jar of salsa
• 2 cups of veggie broth
• 2 limes, juiced
• 1 red onion, diced
• 1 tsp minced garlic, minced
• 1 tsp avocado oil

1️⃣ sauté onion & garlic in 1 tsp avocado oil for 5 minutes.
2️⃣ add drained & rinsed beans, salsa, veggie broth, lime juice, spices (1T paprika, 1T dried basil, 1T dried oregano, 1T parsley, 1t salt & 1t pepper) to the pot & stir well.
3️⃣ add noodles & stir to ensure it doesn’t stick to the bottom, simmer on med/low for 15 min.
4️⃣ remove from heat & add cheese. Stir. Serve warm.
