I had a few zucchini I needed to use up before I leave out of town so I decided to make a big bowl of Zucchini Oats aka ZOATS! If you’re interested in trying this, I would recommend just starting with a little bit of grated zucchini into oats, then working your way up to 1/2 & 1/2! Feel free to use my recipe below & have fun with the toppingsπŸ₯³

The zoats base is 2 grated @imperfectproduce zucchini + 1/2 cup oats + 2 tbsp @earthlychoice chia seeds + 2 tbsp ground flaxseeds + liquid of choice (I just used water) + cinnamon + pumpkin pie spice + nutmeg. I simmered on low heat (stirring occasionally for about 15-20 min (this created 2 servings for me). Then I served my warm zoats with 1 scopp of @furtherfood marine collagen mixed in + 1/2 sliced banana 🍌 + roasted pecans + pomegranate seeds + @eatnuttzo nut butter πŸ₯œ + cinnamon
