HEALTHY BLUEBERRY COBBLER✨This is low FODMAP, vegan, gluten-free & refined sugar-free! Would you have this for breakfast or dessert? Full disclosure, this was my breakfast yesterday😜

1️⃣ Add about 2 cups of organic frozen blueberries (more affordable than fresh) into a pot over med/low heat. Add 1 tbsp lemon juice + 1/2 tbsp chia seeds + 1/2 tsp lemon zest + 1/2 tsp cinnamon + 1/2 tsp vanilla & mix well. Let it simmer for about 10 min to form a thick consistency.
2️⃣ Coconut whipped cream: place one can of full fat coconut milk in the fridge overnight. The next day, open it and discard the coconut water on top. Add the solidified coconut milk to a bowl + 1 tsp cinnamon + 1 tsp vanilla (optional: add sugar). Whip with an electric mixer for about 1 min.
3️⃣ Once your blueberries have thickened & warmed, add them to a bowl & top with your favorite crunchy granola (I used @wildflowerfoodsco raw superfood granola) + top with come chilled coconut whip + a sprinkle of cinnamon.
