Excuse the fact that I need a manicure & please just focus on the beauty of these VEGAN & GLUTEN FREE LEMON BAR BITES πŸ‹ I can honestly say that these may be one of the best desserts I have ever made, they are perfectly tart, not too sweet but super refreshing for the summer. It is taking ALL of my will power to actually not consume all 24 of them 🀀

Filling:
β€’ 1 cup cashews soaked in hot water for an hour
β€’ hardened part of 1 can of coconut milk (set in the fridge overnight and it will separate)
β€’ 2 tbsp @nwbulkmarket arrowroot powder
β€’ 2 tbsp maple syrup
β€’ Juice of 2 lemons
β€’ 1 tbsp lemon zest
β€’ 1 tsp vanilla
β€’ 1/8 tsp turmeric
β€’ 1/8 tsp salt
1️⃣ Place about 1 tbsp of @sweetlorens sugar cookie dough on the bottom of each mini muffin tin (makes 24).
2️⃣ Add filing ingredients to a blender & blend until smooth.
3️⃣Pour filing over cookies.
4️⃣ Bake for 20 min at 350.
5️⃣ Let rest for 2 hours & store in the fridge for up to 4 days (but won’t last that long πŸ˜†)

  1. Hey Jazz. Trying your lemon bars now. But misread the recipe and baked the cookie bottom first have put the filling on top. Wasn’t sure if i should bake the filling or not so i am winging it and baked for 5 mins so i dont overcook the cookies and then will refrigerate. What do you think?

  2. Baked them for the whole time and they look perfect will taste when they cool. Filling was amazing when i tasted it in the blender. Normally i dislike lemon bars ( was making them for my bf) i always think they are too sweet. But this filling is nice and tart.
