Dinner a few nights ago was a bunch of things I needed to get rid of before leaving on my trip! Now Iโ€™m in California visiting the fam bam, taking a break from cooking for others so I can recharge! I do love cooking, but I also think its important to recognize when you may be on the verge of being burnt out, and need a break. This it def that time for me. Do you think its important to recharge?

โ€ข @eatbanza chickpea pasta with some leftover โ€œcheesyโ€ butternut squash sauce. So I made this vegan sauce a few weeks ago & had leftovers, I just froze the leftover sauce in a mason jar in the freezer then thawed it in the fridge! If youโ€™re looking for the recipe, just check out a few posts back (highly recommend it)!
โ€ข crispy @mycraftycounter minty lentil nuggets. These are completely plant based & I just throw them on a baking sheet for about 10 min to crisp up. Loved dipping it in some of that butternut squash sauce.
โ€ข turmeric infused sautรฉed squash & eggplant. Just chopped up the eggplant & squash in small bite size pieces, sautรฉed in some coconut oil + turmeric + black pepper + salt + sumac. Tossed with feta cheese + red wine vinegar to finish.
โ€ข roasted carrots๐Ÿฅ•& mini bell peppers. Just threw them on a sheet pan with avocado oil + salt + pepper for like 45 min.

  1. Yes, it is very important to have a break sometimes. Always listen to your own body, not what others tell you to do. For example, if somebody tells you “No, keep going!” you don’t have to
