2 large firm avocados
1 cup gluten free breadcrumbs
2 flax egg (2 tbsp flaxseeds + 6 tbsp water)
2/3 cup almond flour
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp parsley flakes
1/4 tsp salt
1/4 tsp pepper

– Create the flax egg & set aside in a small bowl.
– Add almond flour in a small bowl.
– Add breadcrumbs + all of the seasoning to a small bowl.
– Cut the avocado into wedges (I just cut halfway, then cut into 3/4 wedges each side).
– Begin assembly: First dip into the almond flour, then the flax egg then the breadcrumbs. Lay on a parchment paper lined baking dish (repeat with all of the avocado wedges).
– Bake at 425 for about 20 minutes, flipping half way.
