creamy SPINACH ARTICHOKE pasta with homemade BASIL PESTO. Visiting my home town of Santa Barbara this weekend, cooked up this delish pasta dish for the fam. If you’ve never made homemade pesto, I totally urge you to make it.. total game changer. Tag a bestie you would want to make this dish with 💕

1️⃣ Sauté chopped onion + garlic + jarred artichoke hearts + chopped Brussels sprouts + sliced hearts of palm for about 10-15 min in avocado oil.
2️⃣ Meanwhile cook your @eatbanza spaghetti according to the package instructions. Reserve 1/4 cup of the starchy cooking water.
3️⃣ In a food processor, add a handful of spinach + a handful of basil🌿 + a few tbsp olive oil (sorry I didn’t measure) + 2 tbsp pine nuts + 3 tbsp parmesan 🧀 (substitute Nutritional Yeast for dairy free version) + 1/2 juice of a 🍋 + salt + pepper.
4️⃣ Mix together all of the sautéed veggies + cooked pasta + starchy cooking water + creamy pesto. Serve warm & top with some more lemon juice!
