Celebrating with these dairy free & gluten free SPINACH LASAGNA ROLL UPS using @freshcravingssalsa organic creamy garlic almond dip. This dish is not only gorgeous but tastes flavorful & is packed with protein from the almonds & chickpeas! • 6 @eatbanza chickpea lasagna noodles
• 4C spinach
• 1/2C red onion, diced
• 1/3C @freshcravingssalsa creamy garlic almond dip
• 1/3C chopped green onion
• 1/3C chopped parsley
• 2t dried basil
• 1t minced garlic
• 1t dried oregano
• 1/2t salt
• 1/4t pepper

1️⃣ Boil lasagna noodles for 5 minutes. Drain & set on a paper towel to dry.
2️⃣ Sauté red onion + green onion + garlic in some avocado oil over medium heat for about 5 mins, add the spinach in the last 30 seconds.
3️⃣ To a bowl, add the almond dip + sautéed veggies + remaining ingredients. Stir.
4️⃣ Spread an even layer over each noodle (swipe for picture).
5️⃣ Roll each up & place in a small Pyrex dish. Add marinara sauce to the top & bake at 350 for 25 mins.
