✨butternut squash MAC & “CHEESE” protein pasta✨For the record, this is completely vegan yet still has that creamy cheese consistency. Its also a great dish to make in the winter as butternut squash is high in vitamin C & antioxidants so it will keep your immune system strong! PS its currently -10 degrees but feels like -36 with the wind chill today, whats the temperature where you are?

1️⃣ Add 1/4 cup of raw cashews to a cup of boiling water. Set aside for 30 min then drain.
2️⃣ Add 3/4 of a peeled & chopped butternut squash + 1/2 sweet onion to boiling water for 15 min. Before draining, reserve 1/4 cup of the cooking water. Then drain.
3️⃣ Add the drained butternut squash + sweet onion + soaked cashews + 1/4 cup cooking water + juice of 1/2 lemon + 3 tbsp @bragglivefoodproducts nutritional yeast + 1 tsp dijon mustard + 1 tsp garlic powder + 1 tsp onion powder + 1/4 tsp turmeric + 1/4 tsp paprika + salt + pepper to taste. Blend in a high speed blender.
4️⃣ Serve warm over your favorite pasta, I used @eatbanza shells. Sprinkle with some paprika and parsley flakes.

  1. @recipes4health how many servings does this make? And how much @eatbanza for this recipe? Was thinking of using a whole box of the shells so I can have some leftovers too but wanna make sure I have enough cheese sauce 😂
