Another pumpkin recipe request I received was PUMPKIN BREAD 🎃 🍞 So I turned to my friend @wellwithkay for inspiration for a healthy + v + gf recipe! She made pumpkin bars, and I turned them it into bread so check out her recipe for the allergy friendly version, I made some tweaks based on what I had on hand👇🏼
• 1 1/2 cup almond flour
• 1 tbsp pumpkin pie spice
• 2 tsp baking powder
• 1/4 tsp salt
• 3/4 cup canned pumpkin
• 1/2 cup applesauce
• 1/4 cup melted coconut oil
• 1 tbsp apple cider vinegar
1️⃣ Mix the dry + wet ingredients separately. Then add in the wet ingredients little by little into the dry & mix to combine.
2️⃣ Put in a parchment paper lined loaf pan, sprinkle with whatever nuts/seeds you have (I used pumpkin seeds).
3️⃣ Bake at 350 for 60 mins. Let cool before slicing! I topped mine with ghee but I love almond butter on top too!
