After 4 days of being MIA, I’m back! I went to NYC for a little holiday vacation & was honestly was so intrigued by all of the beautiful sights I forgot about my phone, posting or updating social media (it kinda felt nice). But, I missed you guys A LOT & obvi want to share my dinner from last night. What are your thoughts on a social media “fast” this time of year? I’m curious!

@mycraftycounter vegan minty lentil wundernuggets (baked at 425 for 10 min to make them extra crispy) + roasted carrots 🥕+ roasted broccolini 🥦 + @imperfectproduce roasted Brussel sprouts + roasted baby peppers (for all of the veggies I just threw them on a parchment paper lined sheet pan, sprayed with a little avocado oil, then roasted at 425 for about 30 min) + @eatbanza rotini chickpea pasta (drizzled with olive oil + garlic powder + salt)
