5 ingredient SWEET POTATO & BLACK BEAN FLAUTAS inspired by @shutthekaleup + @rachaelsgoodeats for a quick weeknight meal. Stop what you’re doing immediately & bookmark these for a quick 15 min dinner idea!
• 6 corn tortillas, or any tortilla
• 1/2 tub of @betterbeanco black beans, they’re easily digestible!
• 2 sweet potato, boiled & mashed
• 1/2 cup cheddar cheese, vegan works
• 1-2 tsp avocado oil
1️⃣ Add a spoon of mashed sweet potato to the center of the tortilla.
2️⃣ Add a spoon of the beans on top of the sweet potato & spread evenly.
3️⃣ Sprinkle with as much or as little cheese as you want.
4️⃣ Roll the tortilla & secure with a toothpick.
5️⃣ Pan fry the rolled tortillas in avocado oil on med heat for about 4 mins each side.
6️⃣ Serve warm with cilantro on top!
